Canned Salmon Appetizer

Serves about 6
1 Can Salmon
1 Can Black Beans, Drained and Rinsed
1/2 C. Shredded Cheese (any type)
1 Avocado
Favorite Salsa

Place beans in oven safe dish, tear salmon into chunks, place on beans. Pour on favorite salsa and top with Avocado and shredded cheese. Bake for 5-10 mins or until cheese is melted.

Very delicious and simple. Full of protein, fiber and essential fatty acids.

*Black Beans-have more antioxidant activity, gram for gram, than other beans, followed by red, brown, yellow and white beans, in that order.
*The high fiber content in Black Beans helps keep blood sugar levels from rising too rapidly after a meal, making them a wise choice for people with diabetes, insulin resistance or hypoglycemia.
*Salmon proteins(and most other fishes) are easy digestible and easily absorbed into the body.
*Salmon is also a source of good fat (omega-3 fatty acids) which also plays a vital role in keeping you healthy. Salmon is rich in some of the very essential minerals like iron, calcium, selenium and phosphorus.  www.rnh.wholefoodfarmacy.com/2005/ww.asp)
